Tuber borchii

Tuber borchii is a truffle that bears resemblance to the more sought after white truffle t. magnatum without being it… The average size is relatively small and can be traced easily as it is in abundance in the forests of Zagori, Epirus.

It can easily be cultivated as it is a very adaptive fungus with just a few requirements regarding the terroir.

The commercial value of this white truffle is quite high as it is consumed both as a fresh truffle and added in various sauces, oils and spices to give its distinctive aroma.

Fruition: mid December – April (in spring it is the only truffle around…)
